You must schedule an appointment through the official 'MiConsulado' booking system (online at `citas.sre.gob.mx` or by calling their toll-free number). Walk-ins are generally not accepted. During your appointment, consular staff will capture your biometric data (photo, fingerprints, iris scan). In most consulates, your new passport is printed on-site and handed to you before you leave the building, making it a same-day service. If you live far from a permanent consulate, watch for visits from the 'Consulado Móvil' (Mobile Consulate) which travels to rural areas on weekends.
